Research on Wood and Food

Wood in combination with food works great.
Wood is an excellent material for cutting boards. It is a myth that plastic, metal or glass would be better from a cleanliness point of view as cutting boards than wood. Wood is naturally bactericidal if the surface is not coated with oil or varnish. Oak with its tannic acid is best in class, basically all bacteria are dead within 1 hour.
